Overview The Flair Digital Milk Steaming Thermometer is a probe-style digital thermometer for monitoring milk temperature while steaming. The stainless steel probe sits in the pitcher next to the steam wand and reads the temperature in real time, so you can cut the steam at the right moment instead of guessing by feel or by the sound of the milk. For most milk drinks, the target window is 60 to 65 °C. Below that, the milk tastes thin and under-developed; above about 70 °C the milk proteins start breaking down and the texture turns flat.
